In 1980, Dave and Barb Rochat moved onto 160 acres on Chelsea's East Hill. Within a year they had named the old place Highland Links Farm and acquired their first sheep. Now, three decades later, they have a flock of about fifty, moved from field to field by Link, the farm's faithful border collie . Along with a host of other Vermont products, including rabbit, beef, pork, chicken, pheasant, quail, eggs, cheese and syrup, the lamb is marketed to high-end restaurants and shops in Boston and New Yorkt by the Rochat's Rutland based company, Vermont Quality Meats.
